LAUDETO — Castillo Washed & Fermented — Pinchote, Santander, Colombia · 1,800m

Named after Laudes — the sacred first hour of the day — an anaerobic Castillo from a farm three generations deep.

The name comes from Laudes, one of the oldest rituals in human history. For centuries, people have dedicated the first hour of the day to stillness and connection with something greater than themselves. That first moment of the morning has always been sacred. We didn't replace that ritual — we gave it a new form.

Laudeto is grown at 1,800 meters above sea level in Pinchote, Santander — one of the highest-altitude coffee zones in Colombia's eastern mountain range. The farm has been in the same family for three generations. The current farmer didn't just inherit the land; he inherited the obsession for getting it right.

His choice: anaerobic fermentation. Instead of exposing the harvested cherries to open air, they are sealed in oxygen-free tanks where the natural yeasts of the fruit work slowly and without interference. No shortcuts. The result is a depth of flavor and brightness of aroma conventional washed processing cannot produce — caramel that lingers, a grapefruit note that wakes up the palate, and a hazelnut finish that asks for one more sip. The Castillo variety, usually known for its clean and balanced profile, becomes something more complex in Laudeto's hands.

In the cup: Caramel · Grapefruit · Hazelnut · Medium acidity · Long, clean finish

Best brewed with: V60 — Ratio 1:16 · 18g coffee · 288ml water at 92°C · 2:30–3:00 min total extraction.

FAQ

What makes COFY different from other “specialty” coffees?

COFY is built around true origin control—from cultivation and selection to final roast and cup profile. Every coffee is traceable to a named farm in Colombia, roasted in Santander, and shipped fresh from Miami. You’re not buying a bag—you’re buying a consistent ritual with the people behind the harvest.

Whole bean or ground, what’s best for me?

For peak aroma and clarity, we recommend whole bean (the premium choice).

If you prefer ground, choose the grind that matches your ritual:

  • Fine: espresso-style machines
  • Medium: drip / automatic brewer
  • Coarse: French press / cold brew

Not sure? Choose whole bean—it preserves freshness and gives you the most expressive cup.

How does the subscription work? Can I skip or change anytime?

Yes. Our subscription is designed to feel luxury and flexible, not restrictive. Choose your delivery cadence (every 2 weeks or every 4 weeks recommended), then manage everything from your account:

  • Skip a shipment
  • Pause anytime
  • Swap coffees (House ↔ Exotic)
  • Change grind preference

Subscribers receive 15% off, so your ritual stays consistent—and smarter.

Where do you ship from, how fast is delivery, and do you offer free shipping?

We ship from Hollywood, Florida using UPS/USPS. Delivery times vary by location based on carrier service, but we prioritize fast fulfillment and careful packing to protect the cup quality.

Free shipping applies on orders $40+ most customers reach it with two bags or a subscription.
