The Geisha variety is the most coveted coffee in the world. Originally from Ethiopia, it arrived in Latin America through a FAO program in the 1960s and found its fame in Panama, where the best lots now sell for over $1,000 per pound at international auction. Growing it well requires altitude, precision, and a willingness to accept low yields in exchange for something extraordinary.

This is the Geisha in its purest form. No fermentation, no intervention — just the washed process, which strips away everything except what the variety and the mountain have to say. At 1,800 meters in the eastern range of Santander, the cherries ripen slowly and the cool nights concentrate the sugars. What emerges is delicate, clean, and unmistakably floral: soft chocolate that doesn't overpower, green grape with a fresh, lively acidity, citrus fruit, and a floral dimension that lingers in the finish. A cup that rewards attention — and the one that travels to Japan.

The farm behind Altura & Aroma is known in Santander simply as La Finca del Doctor. The owner is a physician — and that formation is not incidental. When he noticed that coffee takes exactly nine months to grow from flower to harvest, the same as a human pregnancy, something clicked. He divided the growing cycle into three trimesters and applied a different nutrient protocol to each stage of development — the way a clinician approaches any biological process that unfolds over time. Nothing is left to chance.

The result is measurable: two varieties from this farm have won the Best Cup Award in Santander, international buyers in Japan order every harvest, the National Coffee Federation selected the farm as a reference model of agricultural innovation for its television program Profesor Yarumo, and Rainforest Alliance has certified its environmental practices.
